Simple Saturday: My Favorite Summer Breakfast

Good morning, ya’ll!

I hope you’re starting a relaxing and enjoyable weekend. I don’t have much planned this weekend, and I’m totally ready for some lounging, re-watching the second Hobbit movie with my husband, and getting ready for a super fun week this week (my mom and her best friend will be in town and it’s Jason’s bday!)

Today, I wanted to take a quick minute to talk about my absolute favorite summer breakfast.

It’s melon season! Yippee! I’m really happy when I can keep a big Pyrex of some sort of melon in my fridge every week of summer.

From watermelon to cantaloupe, I love it all. When I bring home a melon from the store or farmers market, I like to make it easy on myself and just break it all down (I have a very large serrated knife for this job) and keep it in pieces in the fridge ready to eat at any time.

Simple Saturday: Summer Smoothie

I’m pretty serious about my breakfast routine.

After I get up and get ready for work, I head downstairs to the kitchen to scrounge up some leftovers or make a pb&j or stir fry for lunch. Then, I pour a bowl of cereal (lately this brand) with Trader Joe’s almond milk and enjoy the sweet, crunchy combination before I head out the door.

I will never get sick of cereal. Whether it’s shredded wheat or granola, healthy or sugary, I love it all.

But lately when I’m feeling like getting an extra helping of fruit in my breakfast, or I had a filling or unhealthy dinner the night before, I turn to this Summer Smoothie.

This creamy concoction has only four ingredients, one of which is fresh mint which always adds a spring to my step! I slap together a few sprigs of fresh mint in my palms (a cocktail trick) and throw them in my water bottle every day to pep up my daily drink. Another one of the ingredients is frozen strawberries (I freeze them leaves and all), the fresh of which we’ve got a lot of here in NC!

To make this Summer Smoothie, all you have to do is:

1. Combine 1 frozen banana, a handful of frozen strawberries (maybe 5 or 6 berries), a few fresh mint leaves and 3/4 to 1 cup of almond milk (depending on how thick you like it) in the blender and blend until combined and smooth.
